The BEST Summer Recipes of 2019 | Blogger Roundup

There’s one month of summer left, can you even believe it?

I’m trying to soak up every last bit of it. That means eating all of the tastiest summer foods I can get my hands on. Gimme all the fresh seafood, roasted veggies, TACOS, colorful salads and BBQ!

Here are some of the BEST summer recipes from my favorite bloggers across the interwebs.

They are absolutely crushing it with inventive recipes and stunning photography…

ARE YOU READY FOR THIS?

Spicy Shrimp Tacos with Charred Corn and Mango Salsa

Get ready to drool! These Spicy Shrimp Tacos with Charred Corn and Mango Salsa from photography maven Jo over at Jo Eats just screams summer. Sweet corn, tropical fruit, fresh seafood…need I say more?

Basil, Watermelon and Feta Salad

Corina from the Searching for Spice blog really has this summer thing all figured out! This Basil, Watermelon and Feta Salad recipe is the perfect balance of sweet and salty. It’s super refreshing on hot summer days and serves as a great side dish for your next BBQ or potluck!

Chicken Empanadas

These chicken empanadas are anything but standard. As Jasmine refers to them on More Than You Can Chew they’re more like arempenadas AKA a cross between arepas and empanadas! The crust is a cornmeal based like an arepa and the filling is shredded chicken goodness. I dare you to only eat one…

Roasted Vegetable Tostadas

Whether you’re in the mood for breakfast or dinner, these Roasted Vegetable Tostadas from the witty and wonderful Emily over at Feelin’ Whisky (how cute is this blog name!), will do the trick. A crispy tortilla, a healthy schmear of refried beans and the sweet flavor of roasted veggies definitely say summer bliss to me.

Strawberry Smoothie

Who doesn’t love strawberries in the summertime? LaKita’s refreshing and protein packed take on a Strawberry Smoothie on the Simply LaKita blog, is just what you need to cool down on these hot days!

Sweet Potato Sausage Skillet with Peppers

I’ve always thought that sausage and peppers were a true match made in heaven. Kate’s skillet version with sweet potatoes on the Babaganosh blog takes it to the next level. The saltiness of the sausage provides the perfect complement to the sweet peppers and potatoes. Try this one for breakfast, lunch or dinner!

Happy summer friends : )
